SEASON:
2021 was a fantastic vintage in terms of quality and quantity. A wet spring followed by abundant sunshine and well distributed rains in January resulted in lush, healthy green canopies. The overall temperature during the growing season was lower than average, resulting in slow ripening and great concentration of flavours and natural acidity.
VINIFICATION:
All Giant Steps fruit is harvested by hand. The Chardonnay grapes are cooled overnight and lightly pressed in 500L French oak barrels, 15% new, 85% used. The juice then ferments with wild yeasts and full solids. The 10% from the barrels underwent spontaneous malolactic fermentation. The wine remained in barrel until October, when it was racked, cooled and bottled.
