Winemaking
HARVEST: Harvested by hand in 10 kg boxes. Sorting is also carried out manually on a conveyor belt.
FERMENTATION: Seven days of pre-fermentative maceration at a controlled temperature of 8ºC. Fermentation is carried out in 21,700 litre stainless steel vats. Fermentation takes place at a temperature of 25oC for seven days with three pump-overs per day. After alcoholic fermentation, post-fermentation maceration is carried out for 10 days at 20°C.
AGING: 8 months: 50% in Second and third use French oak barrels and 50% in stainless vats.
BOTTLING: 27 June 2021.
