HARVEST DATE: 4 April 2019
Winemaking
HARVEST: Manual in boxes of 10 kg. Manual selection is done on a belt before washing and drying the grapes.
MILLING: The grapes are washed and dried before crushing. It is then completely destemmed and gently crushed.
FERMENTATION: Six days of pre-fermentative maceration at low temperature. Fermentation is carried out in a 6,500 litre stainless steel vat at 26o C for seven days, with three pumping-overs per day to respect the fruit as much as possible. After alcoholic fermentation, post-fermentative maceration is carried out for six days. Malolactic fermentation is carried out in barrels.
AGING: In French oak barrels for 16 months (30% new).
BOTTLING: After this careful ageing and natural stabilisation, the wine will be bottled without filtration in January 2020.
