Amplus Cabernet Sauvignon

APPELLATION OF ORIGIN: Maipo Alto, Maipo Valley. High altitude vineyards planted in the piedmont of the Andes Mountains, the most prestigious and emblematic area for Cabernet Sauvignon.
HARVEST: The 2020 vintage is the earliest and most compact vintage of the last decade, with
at least three weeks in advance. This was due to a very dry winter and spring, coupled with a very hot summer. As a result of the dry winter and spring conditions, yields were lower than expected, but with very good concentration. Given the hot summer, we had to be very attentive to the optimum harvest date for each variety to avoid over-ripeness, thus harvesting aromatic grapes with a pleasant balance.
VINIFICATION: The grapes were fermented in stainless steel vats for 7 days at a temperature of 30oC with a post-fermentation process of 6 days. After malolactic fermentation, the wine evolved for 12 months in French oak barrels to give it more complexity and structure.
AGING: 12 months in French oak barrels (25% new - 50% second use - 25% third use). Minimum of 6 months in bottle.
