SEASON:

The cool start to the season was marked by heavy December rains, resulting in lush, healthy green canopies. The final stage of the growing season was warmer than normal, accelerating ripening, but the natural acids in all the Chardonnay blocks remained surprisingly high. The fruit was hand-picked, both in the vineyard and in the cellar. 2019 was an exceptional vintage of Chardonnay.

VINIFICATION:

A selected batch of fruit from each of our 5 vineyards was pressed directly into 675-litre clay egg jars. Indigenous yeasts. Without agitation, the lids were sealed with clay at the end of fermentation. Each egg was decanted for blending during a long cool down before being racked once more and bottled by gravity.

No clarification or filtration.
