History and philosophy of the estate: Combel-la-Serre is a 23-hectare family estate located 17 km from Cahors, on the Causse Calcaire. It came into being thanks to the initiative of Jean-Pierre ILBERT, who decided to leave the cooperative in 1998 to become independent. His son, Julien, returned to the property in 2003 and now works with his wife Sophie. Little by little, the couple have revitalised the estate: converting it to organic farming (through Ecocert), returning to numerous seasonal manual jobs and reflecting on the different terroirs, always with respect for nature.

Origin of the grapes: Originating from the estate and purchased on the Causse Calcaire (between 320 m and 350 m altitude) on mainly clay-limestone soils.

Vinification and ageing: Traditional vinification of short duration (maceration of about fifteen days) in stainless steel and cement vats. Ageing lasts a full year and is carried out exclusively in vats.
