VINTAGE
Rainfall was above average in 2019. Normally we see a slightly later bud break in wet years, which delays the flowering, veraison and harvest stages for full harvests.
our advantage in 2019. With adequate canopy and humidity to withstand the early summer heat spikes, our Cabernet Sauvignon was able to ripen well into the last weeks of October. This led to extraordinary fruit intensity and depth of colour. Our proprietary fermentation methods extracted the full flavour of the Cabernet with abundant pigments, while twelve months of barrel ageing brought complexity and depth of colour.

VINEYARDS
The predominant sources for our J. Lohr Estates Seven Oaks Cabernet Sauvignon are our vineyard located directly across the street from our J. Lohr Paso Robles Wine Center and two new sites just to the north: the J. Lohr Sinclair and J. Lohr Jones ranches. The soils in our vineyards vary from grape rootstock and clonal combinations to maximize the expression of each site, and the different soil types and planting combinations contribute to the complexity of our Seven Oaks Cabernet Sauvignon.
VINIFICATION
Fermentation: Fermented in stainless steel tanks, with maximum temperatures reaching 92°F.
Malolactic fermentation:
Malolactic fermentation, carried out with Viniflora Oenos, took place partly in new American oak barrels and the rest in stainless steel barrels.
Maturation:12 months in 60 gallon American oak barrels, 18.5% new.

Predominantly medium-high toasted Missouri and Minnesota oak with toasted bottoms
