VINEYARDS
Uco Valley. Altamira 40%; Gualtallary 35%; Vista Flores 25%
SOILS
ALTAMIRA: sandy loam to clay loam soils, with an upper horizon of variable thickness between 20 and 80 cm.
Underlain by boulders or gravels with coarse sand and limestone adhering to the surface of the gravels.
GUALTALLARY : Sandy loam soils with silts. With horizons varying in thickness between 40 and 120 cm. Presence of pebbles or carbonate gravels and caliche.
VISTA FLORES: soils with little organic matter and variable depth between 50 cms and 1.2 metres. The presence of large quantities of sand and large circular stones at depth make them very permeable and well drained, with the presence of small circular stones or "pebbles" on the surface.
FERMENTATION
Prefermentative maceration for 72 hours, fermentation in barrels and stainless steel tanks, with total maceration between 15 and 24 days, fermentation temperatures up to 25°C.
BREEDING
18 months in 225 litre French oak barrels, with 80% of new barrels.
