Malbec (Côt) from Combel-la-Serre, the estate of Julien and Sophie Ilbert in the Causses of Cahors (AOP Cahors), grown using organic farming certified by Ecocert. Its own grapes and those purchased in the Causses, at altitudes between 320 and 350 m, on soils mainly clay-calcareous; vines are an average age of 30 years and yields are 40 hl/ha. Traditional short vinification with maceration in stainless steel and cement tanks for about 15 days, and a full year of aging exclusively in tank without wood. Young profile, focused on the fruit. Year 2022.

History and philosophy of the estate: Combel-la-Serre is a 23-hectare family estate located 17 km from Cahors, on the Causse Calcaire. It came into being thanks to the initiative of Jean-Pierre ILBERT, who decided to leave the cooperative in 1998 to become independent. His son, Julien, returned to the property in 2003 and now works with his wife Sophie. Little by little, the couple have revitalised the estate: converting it to organic farming (through Ecocert), returning to numerous seasonal manual jobs and reflecting on the different terroirs, always with respect for nature.
