Soil of alluvial origin with an upper layer of clay loam composition.
The profile is dominated by conglomerate with abundant boulders.

Type of management: Medium to low density canopy, seeking to illuminate the bunches with indirect light and protect the fruit from direct sunlight, soils with traditional tillage allowing the coexistence of rye row by row. Sustainable management avoiding the use of herbicides and pesticides. Pruning is double guyot type.
VINIFICATION:
Harvest date: mid-March.
Harvested by hand in boxes of 20 kilos.
Winemaking: Traditional, with pre-fermentative cold maceration for 3 days and 10% of whole cluster. Work on the cap is carried out by pumping over and treading.
Fermentation temperature 25° C.
Aging in concrete tanks until bottling.
