ALTITUDE: 1350 metres above sea level CHARACTERISTICS: It is characterised by cold nights, due to the proximity of the mountain range and the altitude, giving wines of great intensity in colour, aroma and structure, destined for high quality and long ageing.
FERMENTATION
Pre-fermentative maceration for 5 days at 8 oC.
Alcoholic fermentation takes place in stainless steel tanks for approximately 14 days at 28oC, with a subsequent maceration of 16 days.
Malolactic fermentation 100 %
BREEDING
10 months in French (90%) and American (10%) oak barrels of first and second use.
