RAINFALL: 433 ml (average April '15-March '16: 547 ml)
VINEYARDS: Ebenezer, Greenock, Krondorf, Marananga, Mengler's Hill, Moppa, Stone Well, at 260-500 m altitude. Sustainably farmed with organic principles.
VARIETY: 85% Shiraz, 10% Cabernet Sauvignon, 5% Grenache
AGE OF THE VINEYARDS: Average 35 years old
SOILS: Sand, red/yellow clay, limestone, quartz and ironstone.
AVERAGE YIELD: 2.0 t/ha or 34 hl/ha
PRODUCTION: 500 boxes
VINIFICATION: 2-5 t in open tanks, indigenous yeasts, two-week fermentation, pumping over and punching down by hand twice a day.
MATURATION: On fine lees, 10% in new French oak barrels, a mixture of 2250L, 600L, 500L, 300L and 228L.
BOTTLING: March '17, minimum SO2.
