VINIFICATION:

Harvest date: Los Árboles mid-March.
Harvest in boxes of 20 kilos
Traditional production: Cold pre-fermentation maceration for 3 days. Fermented in cement vats without epoxy for 17 to 20 days. Work on the cap is carried out by pumping over and stomping. Fermentation temperature 25°C.
Aged in 225 litre oak barrels, 500 litre barrels and 3500 litre foudres for 12 months. Stored in stowage for 6 months in the bottle.
