ALTITUDE: 1350 metres above sea level CHARACTERISTICS: It is characterised by cold nights, due to the proximity of the mountain range and the altitude, giving wines of great intensity in colour, aroma and structure, destined for high quality and long ageing.
FERMENTATION
Cold pre-maceration (5-8oC) for 5-8 days to extract colour and aromas. Fermented in stainless steel tanks for approximately 10-14 days at 28oC.
100% Malolactic Fermentation.
BREEDING
18 months in new French oak and cellaring for at least 12 months.
