Type of Management: Medium density canopy, aiming to protect the fruit from direct sunlight, no-tillage soils, maintaining a cover of native plants combined with rye sowing.
VINIFICATION: Harvest date: First week of April.
Harvest in 20 kg crates, traditional production, cold pre-fermentative maceration.
for 3 days, cap work carried out by pumping-over and treading. Fermentation temperature 25°C.
The 20% wine is aged in French oak barrels for 6 months.
