TERROIR:
Shallow soil, loamy-sandy texture with low fertility and presence of pebbles.
Irrigation: Drip irrigation.
Altitude: 1200 masl
Year of implementation: 2000
Type of management: Medium density canopy to protect the fruit from direct sunlight, no-tillage soils with a cover of native grasses combined with rye sowing. Cordon pruning.

VINIFICATION: Harvest date: First week of April.
Harvest in 20 kg crates.traditional production: cold pre-fermentation maceration for 3 days. Fermented in cement vats without epoxy for 20-23 days. Work on the cap is carried out by pumping over and treading. Fermentation temperature of 25° C. First stage of ageing in French oak barrels of 225 and 500 lts. and a second stage of ageing in foudres of 3500 lts. for a total of 18 months. Bottled on 26 May 2020 and stored in cellar for 12 months.
