Shallow soil, sandy loam texture, low fertility with presence of fragmented stones.
Irrigation: Drip irrigation.
Altitude: 1,090 metres above sea level.
Year of implementation: 2000.
Type of Management: Medium density canopy, aiming to protect the fruit from direct sunlight, no-tillage soils with a cover of native plants, combined with rye sowing.
VINIFICATION:
Harvest date: Second half of March.
Harvested in 20 kg crates.
Traditional production: Cold pre-fermentation maceration for two days. Work on the cap is carried out by pumping over, delestage and treading. Fermentation temperature 25 °C. Ageing of 20 % in French oak for 8 months and 80 % in stainless steel tanks.
