History and philosophy of the estate: Combel-la-Serre is a 23-hectare family estate located 17 km from Cahors on the Causse Calcaire. It came into being thanks to the initiative of Jean-Pierre ILBERT, who decided to leave the cooperative in 1998 to become independent. His son, Julien, returned to the property in 2003 and now works with Sophie, his wife. Little by little, the couple have revitalised the estate: converting it to organic farming (through Ecocert), taking up numerous seasonal manual jobs and reflecting on the different terroirs, always with respect for nature.

Vinification and ageing: Vinification in cement vats with maceration for an average of twenty days. Ageing, which lasts about fifteen months, takes place in old 225 and 500 litre French oak barrels and in conical barrels.
