GROWING SEASON
The 2021 growing season was moderate and consistent, with start and finish dates more typical for our 50th vintage. Due to drought conditions, we observed slower bud growth, so we provided extra care and attention to the vines by managing canopy and crop loads. Shorter bud break, combined with below average fruit set, resulted in lower yields compared to last year.

81% Sauvignon Blanc, 16% Sauvignon Musqué, 3% Sauvignon Gris

FERMENTATION
83% fermented in stainless steel at an average temperature of 52°F for approximately 22 days; 17% barrel fermented at an average temperature of 62°F for 11 days in acacia, neutral French oak and chestnut barrels.

HARVEST DATES: 26 August to 15 September 2021
AGE OF VINE: 10-22 years old
SOILS: Alluvial valley soils, sandy loam and silt loam with some gravel.
YIELD: 5 tonnes per acre
