ALTITUDE: 1350 metres above sea level. CHARACTERISTICS: It is characterised by cold nights, due to the proximity of the mountain range and the altitude, giving wines of great intensity in colour, aroma and structure, destined for high quality and long ageing.
FERMENTATION
Cold pre-fermentation maceration for 5 days at 8oC to extract colour and aromas and post maceration for 20 days. Alcoholic fermentation in stainless steel tanks for approximately 15 days at 28oC.
100 % malolactic fermentation done directly in new French oak barrels.
BREEDING
Aged for 18 months. Stored in the bottle for at least 12 months before being marketed.
